Chocolate Pancakes Recipe


We made the most wonderful, yummy chocolate pancakes on Saturday.  It started the way most of my recipes do.  I asked the kids if they wanted pancakes.  Then, I asked if they wanted cinnamon pancakes.  Then of course, they said, "With Chocolate Chips!!!".  I then had to inform them that we did not have any chocolate chips in the house.  So, as my mind often does, it wandered.  Hmmmm. . . I do have cocoa powder.  I'll make chocolate pancakes!!!  So, I came up with a recipe.  Here it is!

Chocolate Pancakes

2 Cups All-purpose flour--(I ran out of whole wheat flour, people!)
2 heaping Tbsp. cocoa powder
1/4 c. brown sugar
1/4 c. white sugar
2 Tbsp. baking powder
1 tsp salt
1 tsp cinnamon
1 1/2 c. milk
2 eggs
1/4 c. vegetable oil
1 Tbsp. vanilla

Mix dry ingredients together.  Mix wet ingredients together.  Combine wet and dry ingredients until just mixed.  Do NOT overmix.  I usually let my mix sit for 5 - 10 minutes before cooking.  Cook on medium-hot griddle.  You can tell the griddle is ready when water "dances" on the surface.  I usually take a stick of butter and grease the pan.  I wipe off the excess with a paper towel.  Use a ladle to pour batter onto griddle.  When bubbles are "set" on the top, it's time to flip.  I ate mine with a strawberry topping that I made like a strawberry shortcake topping, with very little sugar added of course!  And the kids ate them with a little Hershey's syrup on top.  They went all chocolate.   My husband even ate one when he got home and liked them.  And he's kind of picky sometimes.
