Holy Moly!  What a mess!

I think these turned out okay.  My son said he liked them.  But, I'm still trying to figure out if he was just digging through them to get the white chocolate chips.  I realized after I was eating one that it was missing "something".  I didn't put any salt in the recipe!  It could have used a smidgen of salt.  Here's the recipe if you'd like to try.  Remember, mine are always "tweaks & foibles" until I get the recipe perfect. 

Orange Oat White Chocolate Chip Muffins
1 cup Quick Cooking Oats
1 cup Whole Wheat Flour
1/4 cup white sugar--  Use a little more if you like sweeter muffins
2 tsp. Baking Powder
1/4 tsp. salt-- This is what I'm gonna start w/next time since I forgot this time.  D'oh!
1/8 tsp. nutmeg
1/8 tsp. cloves
1/4 tsp. cinnamon
1 cup Orange Juice
3 Tbsp. Canola oil
1 Tbsp. Vanilla extract
1 egg
1/4 c. white chocolate chips

Mix dry ingredients together.  Mix wet ingredients in separate bowl.  Combine wet and dry ingredients.  Don't mix too much--mix just until combined. Fold in chocolate chips.  Let sit for 10 minutes before putting in muffin pans.  For mini muffins cook at 350 for 9 minutes.
