I had some bananas to use the other day and decided to make something other than plain ol' banana muffins. This was my inspiration:
Frozen Bananas.You know the kind that are dipped in chocolate and peanuts? This is not an ad for the above company. I've never heard of the company before now. It's the only picture I could find! But, their site makes them sound so yummy and they sell them at my local grocery store, so I'm gonna have to check them out. Because now I want one! Here's their link:
Preheat oven to 350. Sift together all dry ingredients in large bowl. Microwave peanut butter and honey in a small bowl until softened and easy to stir (about 45 seconds). Stir banana, egg and milk into peanut butter/honey mixture. Combine dry ingredients and wet ingredients until just mixed. Let stand 10 minutes before filling muffing tin. I always do mini muffins. Definitely spray/prepare your muffin pan. If you use liners, spray those as well. The peanut butter makes them sticky. Cook in the 350 degree oven for 9-11 minutes. (for minis)
