Chocolate Crisp Covered Marshmallows

I was planning to make cake pops for my son to take into school to celebrate his birthday.   But, I decided instead of going through the whole hassle of cake pops, I would just cover marshmallows with melted chocolate.   And  I decided that it might be good if the chocolate was crunchy.  I thought about crunching up graham crackers, but decided against them.  So, I added rice krispies to the chocolate once it was melted.  Yummo!  I wish I could have gotten better pictures!  I'm just not good with shiny things. 

I needed to make 15 marshmallow "pops".  For this amount I used:

15 lollipop sticks
  2 large marshmallows each, so 30 total
(1) 12 oz. bag of semi-sweet chocolate chips
1 Tbsp. of Vegetable shortening (Thanks Christy for the tip!)
1/2 cup Rice Krispies cereal

Thread 2 marshmallows onto top of each stick
Heat chocolate chips in microwave safe bowl at 30 second intervals until melted.  Stir each time.  Once melted, add the shortening and heat 20 seconds longer.  Stir until shortening is completely mixed in.  Stir in 1/2 cup of Rice Krispies.

"Twirl" marshmallows in chocolate to cover.  Tap stick gently on side of bowl to let excess drip off.  Place on wax papered cookie sheet.  Put in refrigerator for 15 minutes until chocolate has hardened.  I had some little plastic bags that are meant for lollipop type treats.  So, I stuck each one in a bag with a twisty tie and they're ready to go!  And now, I need to stop sugar again.
