Marinated Hot Peppers

In those big boxes of peppers and tomatoes that my neighbors brought over, there were some hot peppers too. Remember these?

I had no idea what to do with them.  Then, I was at our local supermarket and they have an olive bar.  A light bulb went off in my head.  I can marinate them!  I love, love, love pickled peppers.  I love them so much that I usually buy the gallon jug of pepperoncinis when I'm at GFS.  I figured marinating them would be pretty close to that. 
Here's the recipe that I used.
 
1/2 cup malt vinegar
1/2 cup water
1/4 cup olive oil
3/4 tsp. salt 
2 cloves of garlic, minced
1 tsp. dried oregano

Cut peppers into rings.  If you like them hot, leave seeds in.  If you want them more mild, get rid of seeds.  Place in shallow dish that has a cover~~I didn't have one (well, really, didn't feel like un-burying it)  Mix together all other ingredients.  Pour over peppers and let sit in the refrigerator for several hours.  You can put it in a jar and keep it for up to 2 weeks.  But, if the people in your house are like the people in mine, they'll be gone the next day!
