Chocolate Chip Pumpkin Ice Cream Pie
If you follow me on Facebook or Twitter, you might have seen that I was using canned pumpkin to come up with a dessert. This is what I was using that canned pumpkin for the other day!
I thought that if I mixed vanilla ice cream and canned pumpkin together, it would make a nice subtle pumpkin flavored ice cream.
It is really very simple.
Here's what we used:
Vanilla Ice cream--About 1 1/2 cups
1/3 cup canned pumpkin
1/4 tsp. cinnamon
1/4 tsp. nutmeg
graham cracker pie crust
1/4 cup miniature chocolate chips
Optional extra--Hard Shell Caramel topping
Let the ice cream thaw until it can be mixed together easily with the canned pumpkin.
Mix together ice cream and pumpkin. Stir in cinnamon and nutmeg.
Pour into pie shell and sprinkle in chocolate chips.
Re-cover with the plastic lid from the pie shell if store bought. Otherwise cover with aluminum foil or plastic wrap--Just make sure the cover doesn't touch the top of the ice cream.
Let the ice cream re-freeze. Serve with Hard Shell Caramel topping if desired.
