Chocolate Chip Pumpkin Ice Cream Pie | Easy Fall Dessert

It's that time again. Time for pumpkin everything!  Even if you are reading this when it's not Fall, canned pumpkin should be readily available at most major grocery stores.  This is a super simple, decadent dessert for Fall.  But, feel free to enjoy any time you would like to savor those creamy, spicy, Fall flavors.

I thought that if I mixed vanilla ice cream and canned pumpkin together, it would make a nice subtle pumpkin flavored ice cream.

It is really very simple.
Here's what we used:

Vanilla Ice cream--About 1 1/2 cups
1/3 cup canned pumpkin
1/4 tsp. cinnamon
1/4 tsp. nutmeg
graham cracker pie crust
1/4 cup miniature chocolate chips
Optional extra--Hard Shell Caramel topping

Let the ice cream thaw until it can be mixed together easily with the canned pumpkin.

Mix together ice cream and pumpkin.   Stir in cinnamon and nutmeg.

Pour into pie shell and sprinkle in chocolate chips.

Re-cover with the plastic lid from the pie shell if store bought.  Otherwise cover with aluminum foil or plastic wrap--Just make sure the cover doesn't touch the top of the ice cream.

See that spot on top?  That's what happens when the aluminum  accidentally touches it while freezing!

Let the ice cream re-freeze.  Serve with Hard Shell Caramel topping if desired.
Enjoy!

What is your favorite pumpkin dessert?
