Super Easy Shepherd's Pie

My sister gave me this recipe a long time ago.  I love it because it uses taco meat.  And, I loooooooove taco meat!  And it's super easy.
Yes, that's mashed potatoes and cheese!  Yummo!
This past time, I used canned grean beans and corn.  You can use fresh or frozen vegetables also, but fresh will add steps, since you'll have to cook them first!  I don't usually like to used canned things because of all of the BPA stuff now, but I used them for the convenience this time.  For healthier canned vegetables, grab the sodium-free.  You can of course, use real mashed potatoes, as a substitute for boxed mashed potatoes.  I am just giving you the quickest, easiest version.

Shepherd's Pie
1pound of your favorite ground meat
1 taco seasoning packet
1 can kernel corn (15 1/4 oz.)
1 can green beans (14 1/2 oz.)
12 servings of instant mashed potatoes 
plus, milk and butter as per potato package directions (My instructions were for 1 1/2 c. milk and 6 Tbsp butter)
Shredded cheese--either Cheddar or Colby-Jack--Amount = As much as you like!

Brown ground meat and make taco meat according to package directions.
Make mashed potatoes according to package directions.
When meat is done, combine with corn and green beans in 9 x 12 baking dish. 

Then, cover with a layer of mashed potatoes.
Top with shredded cheese.
Cook at 350 degrees for 20-30 minutes.
Mmmmm. . . yummy, comfort-food goodness!
