Cauliflower Crust Pizza Inspired by Daily Dish Recipes

Thank you to Nicole from Daily Dish Recipes for sharing this recipe with me on her blog!  
She had made mention in passing one time that she made a pizza with a cauliflower crust.  I filed that in my memory and pulled it out the other day.  I asked her if it was on her blog and she promptly posted it!

My hubby tried it and ended up eating half of it!  He said, "Hey, this isn't bad!".  He's usually pretty adventurous with veggies, though.  But, it really was good.
The only changes I made to her recipe were that I didn't make exact measurements on my cauliflower or cheese.  I estimate that I used 4 oz. of Mozzarella and about 1/2 head of a small cauliflower.  I also added Parmesan to the cauliflower/cheese/egg mixture. 

Once the crust was pre-cooked, I did not add any sauce or additional cheese to the "pizza".  I just put thinly sliced tomato, some canned mushrooms and dried parsley on.  Then I threw it back in the oven for 5 minutes.

I will definitely make this again!  My hubby and I both enjoyed it.
