Meal Plan Monday with Links to Recipes

Since we're trying to be good and not spend money, I thought it would be a good idea to start meal planning again.  Here is my menu for this week for dinner.  I also thought it would be fun to find recipes for you guys if you'd like to try something yourself.  I love allrecipes.com for everything.  It is my go-to source for recipes, even though I own over 30 cookbooks. 

Monday:  Taco Night (ground turkey taco meat, sauteed onions and red pepper, refried beans, tomatoes, shredded cheese, taco shells, tortillas and avocado.  Skipping the rice this time.)

Tuesday:  Vegetable Moussaka -- I couldn't actually find a recipe for this on Allrecipes.com.  So, I found one that was the closest to the one I use at Yummly

Wednesday:  Mike works late, so the kids and I will probably make Homemade Pizza.  Here is a recipe from allrecipes.com for a Whole Wheat Pizza Crust

Thursday:  Mike works late, so I'll make something kid-friendly.  Not sure what yet! 

Friday:  Stuffed Shells -- Jaycee saw them at the store today and asked what they were.  I told her that we could make some soon.
This recipe was ranked 4 1/2 stars by the 405 people who reviewed it.  I like that it used cottage cheese instead of Ricotta.  I'll be trying this recipe!!  

Saturday:  Garlic Broiled Chicken, Au gratin Potatoes and Roasted Broccoli
(4 1/2 out of 5 stars w/ 2135 reviews--MUST be good!)

Sunday:  Teriyaki Salmon, Asparagus
