Roasted Edamame with Taco seasoning
This is another great Family Fun magazine find. Again, I'm not affiliated with them, except as a loyal reader. I receive at least 15 magazines a month and Family Fun is the only one that I actually sit down and read all the way through. On page 68 of September's issue, they have a recipe for "three-flavor beans". We only used one flavor--taco.
1 (10 oz.) bag of frozen edamame, thawed
1 Tbsp. olive oil
1 packet taco seasoning
Mix together edamame, olive oil and seasonings in a bowl, until edamame is well coated with the seasoning mixture. Spread in a layer on a parchment paper lined baking sheet. Cook at 375 degrees for about 50 minutes. They should be browned. We left ours in for just shy of 50 minutes and they were slightly overcooked. They don't look like much in the picture, but they sure were yummy! I think I overcooked them by about 10 minutes.
