Margarita Muffins with Spelt Flour
On that crazy diet I'm on, one of the flours that you're allowed to use is Spelt Flour.
The recipe also uses Xylitol instead of sugar.

I will probably try it with Coconut oil instead of butter next time, too.
This recipe only makes 6 normal sized muffins. You can adjust accordingly.
3/4 cup Spelt Flour
3/4 tsp. baking powder
1/8 tsp. salt
1/4 cup unsalted butter, melted
1/2 cup Xylitol
1 large egg
1 lime, zested and juiced
1/2 tsp. vanilla extract
1/4 cup plain low-fat yogurt
juice from half lemon
Preheat oven to 325. Mix together the flour, baking powder, salt and lime zest in a medium bowl.
In a small bowl combine melted butter, xylitol, egg, lime juice, lemon juice, vanilla extract and yogurt.
Add wet ingredients to dry ingredients and mix until just combined.
Let stand 10 minutes.
Prepare muffin cups with muffin liners or cooking spray.
Fill muffin pan and cook for 19 - 25 minutes.
Everyone in my house who tried them, liked them. My hubby thought they tasted kind of like pound cake.
