Darn you Kale, you ruined my soup and it's time to go to the store!
In my world of "Hit or Miss" recipes, the soup tonight was definitely a big ol' MISS! I don't have very many "misses", thank goodness, or I might give up cooking all together. Some of you might be asking why in the world I would put kale in my soup, anyway. I know that a lot of people think that they don't like kale. I love kale, though. And I had seen recipes for soup with kale before, so I tried it.
I was so excited about my soup, because I was using the beef left over from our prime rib and the beef stock that was left over. And I was using mushrooms and barley and tomatoes. Sounds good, right? Garlic powder, dried minced onion, bay leaf, salt, black pepper, red wine. I added the kale because I had some in the fridge that needed to be used. I never did make the kale chips that I bought them for and it was getting kind of iffy, so I figured why not add it to the soup.
I went to try the soup when the four hours was up in the slow cooker. . . . . . and "Ewwwww!!!", it was so bitter. So, I added six tablespoons of sugar. It was still a little bitter. So, then I added parmesan cheese. . . . and noodles to my own bowl of soup. I managed to eat my whole bowl of soup and put the rest in the fridge, because I try not to waste food.
But, someone please remind me next time how BITTER that kale made my soup!!!
After getting rid of the rest of the prime rib, the kale and stuff that had been in the fridge too long, this is what my fridge looks like. I'm going to look like Old Mother Hubbard soon.
What can I make with left over cheesecake, about a dozen eggs, 1/2 cup of cottage cheese, raisins, a gallon of pickles and a quart of jalapenos?
Time to go to the store. I need to go to the store anyway because I have to make cupcakes with blue frosting on Sunday for Jaycee's birthday.
Do you have any tips for making soups less bitter once the damage is already done? The sugar helped a little, but it needed something more. Someone please tell me a good tip!
