Apple Cinnamon Waffles

On one of the first days of our Christmas Break, I made these waffles.  These are not light and fluffy waffles like some waffles.  The batter would probably make good pancakes, but sometimes I get lazy and don't feel like getting pancakes perfect.  So, I use my waffle iron.  My waffle iron makes things SO much easier.  I don't have to stand there and watch to see the bubbles set like I do with pancakes.  I pour the batter in and wait for the "click" to tell me they're done.  Easy-peasy. 
My hubby isn't even a waffle or pancake type person, but he liked these.  So, I'll probably be making them again.
Ingredients
1 cup all purpose flour
1/2 cup whole wheat flour
1/2 cup quick cook oatmeal
2 Tbsp. baking powder
1/2 tsp. salt
1 1/2 cups apple juice
1/4 cup butter, melted
2 eggs
1 Tbsp. vanilla
1 tsp. cinnamon
1/4 white sugar
Directions
Preheat waffle iron.  Combine dry ingredients in a small mixing bowl.  Combine wet ingredients and sugar in a large mixing bowl.  Add dry ingredients to wet ingredients and mix until just combined.  You should never over-mix pancake, waffle or muffin mixes because it can make them tough.
Spray waffle iron with non-stick cooking spray.  Pour batter onto waffle iron.  Cook until the waffle iron indicates the waffles are done.  Repeat until all batter is gone!
