Sausage Egg Casserole

I made this for Christmas morning.  It would be a great casserole for any cold winter morning!   I wanted to make something for Christmas day that required very little prep on the morning I had to cook it. This casserole is nice because you can prepare most of it the day before.  The only thing you have to do the "morning of" is mix the butter into the flour and then mix that into the egg mixture and bake. 
It was SO good.  I've pinned the original recipe below.  I love that the flour makes little pockets of "biscuit" flavor inside the casserole.

But, I didn't have everything according to the directions.  I just used the recipe as a general idea.


  Here's what I used instead:
16 oz. of pork sausage
green onions, snipped with kitchen shears
8 oz. of mushrooms, sliced
12 oz. of cottage cheese
8 oz. of lower fat cheddar jack, shredded

I skipped the diced green chile peppers and used less cheese. 

I did the flour part the same as the recipe pinned above.
