Taco Noodle Soup
This is an easy soup to throw together. We love mexican flavors in our house. My kids would probably eat tacos every single night if given the choice. But, usually when we make tacos we have to use 3 pounds of meat to have enough for dinner and leftovers for my hubby's lunch the next day. With this soup, I can get away with using only 1 pound of meat.
1 lb. ground turkey
1/4 cup (or one packet) taco seasoning
1 tsp. garlic powder
1 Tbsp. dried, minced onion
1/2 tsp. paprika
1 tsp. cumin
1 tsp. chili powder
2 cans lower sodium chicken broth
28 oz. can diced tomatoes
15 oz. can black beans
1/2 pound frozen corn
7 oz. dried macaroni
Brown ground turkey in large soup pot. Once turkey is browned, add taco seasoning, garlic powder, minced onion, paprika, cumin and chili powder. Stir until the seasonings are mixed in. Add chicken broth, tomatoes, black beans and corn. Bring to a low boil. Add macaroni and cook for 7 minutes.
Garnish with sour cream, shredded cheese and jalapenos.
