Baked Apples with Buttered Honey Yogurt Sauce
This recipe earned a
"Holy crap that's good!"
from my hubby.
I know that it's not apple season, but I got Red Delicious Apples when they were less than a dollar for the 3 pound bag at Aldis a couple weeks ago. Those apples have been hidden in my bottom drawer of the fridge and nobody thinks to grab them and eat them. We put two of them to use today for these baked apples. We used a half apple each in four individual ramekins. I know that you would usually use a tart apple in most baked apple dishes because you end up adding so much sugar! But, as I said. . . . . .. . . less than a dollar for three pounds!!!
I was trying to make that honey "caramel' sauce again, but I wanted to use a little more yogurt this time and see how it turned out.
For the sauce we used:
2 Tbsp. butter
1 Tbsp. coconut oil
1 Tbsp. brown sugar
1/4 tsp. salt
1/4 tsp. vanilla extract
1/8 tsp. cinnamon
1/3 cup honey
1/3 cup plain yogurt
We also used 2 red delicious apples and 1 sheet of graham crackers (4 small rectangles)
To make the sauce:
In a small saucepan, melt together the butter, coconut oil, brown sugar, cinnamon, salt and vanilla extract over low, stirring continuously.
When it is all melted and combined, turn heat off.
Mix in yogurt and honey and stir until smooth.
For the apples:
Preheat the oven to 350 degrees.
Peel and dice one half apple for each ramekin.
Spoon 3 Tbsp. of honey yogurt sauce over apples.
Crumble one small graham cracker rectangle over apples and sauce.
It will be easier to handle if you place your ramekins on a baking sheet or pan.
Bake in preheated oven for 30 minutes.
