Meal Plan Monday and Goals for the Week (Late!)
Who else is tired of Winter? This has been a crazy Winter and another crazy week. On Friday night my son started not feeling well with a tummy ache. Then he threw up. The next morning, he threw up again and then had some really, really bad feet and leg pain. We almost took him to the ER. Luckily, we were able to get him to eat a banana and some chicken broth and take some ibuprofen and the painful legs went away. I have never seen him in so much pain. It was heartbreaking. Thank goodness we were able to get him hydrated enough to stop the pain. He's still home today since he's still having some tummy issues. Apparently, this is a really bad strain of stomach virus. According to one of the news stations here, it is possible to get the same strain again. There is no immunity to it, even once you've had it. It's extremely contagious and it lasts longer than a normal stomach virus. Also, you can throw up, be sick for a couple days, seem fine and then be sick again the following day. It's tricky. And that's probably why it keeps going around.
So again, I'll ask. . . .. . . .. .who else is tired of Winter? And being cooped up? I can not tell you how happy I'll be on the that first 60 degree day when I can finally open up every window in this house.
I took my daughter to the doctor yesterday because we thought she had a sinus infection. The doctor said she thought her headaches could be tension headaches because they are more in the top and back of her head. There was a little "girl drama" going on around here this past weekend, so I believe that it could be tension headaches. She gets headaches occasionally and we are going to start a headache journal to keep track of things just in case.
Luckily, my cold seems to be going away. I think it might be due to the copious amounts of green tea I've been drinking all week. I had a couple bad nights with a stuffy/runny nose and some sneezing and now I'm just a little stuffy.
So, on to the Meal Plan for this week, which may or may not happen or get eaten. . . . or whatever. It seems a lot of these meals are spicy and I'm not sure how that will go over with the tummies in this house.
Monday: Pulled Pork Mac 'n Cheese, Roasted Brussels Sprouts, Roasted Beets (me only), sliced cucumbers.
Tuesday: Rice and Bean Enchiladas. . . . . . . . really? We'll see!
Wednesday: Caribbean Pork & Mango Chili with Coconut Rice . . . .. see what I mean?
Thursday: Not so Tartare Salmon from an Ina Garten recipe w/ undecided
Friday: Boca Burgers
Saturday: Every Man & Woman for themselves
Sunday: Italian Chicken w/Fennel & Cannellini Beans in the Slow Cooker
Goals for the week
Survive. Rewash all the blankets in the house, wash the couch cushion covers, mop floors, make sock dusters and dust the house.
