Peanut Butter Chip Graham Cookies

These cookies are made with whole wheat flour and graham crackers.  We added in peanut butter chips and only a few chocolate chips because my kids are probably the only kids on the planet that don't like chocolate chips in their cookies. 

Ingredients
1 cup whole wheat flour
3 graham crackers (whole sheet), crumbled into little pieces
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt

1/2 cup butter (1 stick)
1 egg
1/2 cup lightly packed brown sugar
1/4 cup honey
1/2 tsp. vanilla extract

3/4 cup peanut butter chips
1/4 cup chocolate chips

Directions
Preheat oven to 350.
Whisk or sift together the dry ingredients, including the graham cracker pieces.
Cream the butter, sugar, honey, egg and vanilla extract together.
Mix together the wet and dry ingredients until smooth and then fold in the peanut butter and chocolate chips.

 Scoop with cookie scoop or tablespoon onto baking sheet or baking stone.

Bake in preheated oven for 9 - 14 minutes (all ovens and baking sheets, stones, etc. are different)

If they look soft, leave them on the stone or cookie sheet for a couple minutes.
Our first batch was pretty soft.
Move to cooling rack after a couple minutes.
If they're soft when you take them out of the oven, they will firm up after sitting on the cooling rack for a few minutes.

It made between 24 to 30 cookies depending on how big you make them.
