Monday Meal Plan, Budget Updates and Goals for the Week

It was beginning to look a lot like summer here in Northeast Ohio this past week.  In fact, we broke a record for high temperature on Friday!  Whooo-boy! I don't want to complain about it because we had such a long, hard, cold Winter.  We had friends over for drinks on our front porch Friday night.  It would have been great if carpenter bees hadn't been making homes in our chairs!  Those silly things.  I don't want to kill them because even though they're not honey bees, they still pollinate.

We saw our first hummingbird, but we don't have our feeder filled yet!  Poor thing.  Once my gladiolas come up later in the summer, they love the gladiolas. 

On Friday night we had our first watermelon of the season. 

 I don't know if it was good or not because the boys ate all of it before anyone else got a chance!  I think this year at some point I'm going to try to find an "old-fashioned" watermelon.  You know the long ones with real seeds in them?  Sounds like a good thing.  The kids can have a watermelon seed spitting contest.

We also had our first water guns out.

My son complained and said, "Why do we have waterguns?"  About two hours later, I saw him chasing a girl with two water guns in hand.

Saturday, we had a great day for soccer.  Blue skies and warm.  A little too warm sometimes, but I said I wasn't going to complain, so. . . . .
we had to take respite under a tree for about an hour between games.
 This is what happens when you forget to put sunblock on the 2 inches of your legs that accidentally show when your shorts ride up. . . . . a weird sunburn.
Saturday night, we watched part of the Jaws-a-thon that was on AMC.  The Builder and I had so much fun watching shark week last year and we loved watching all of the shark movies that went along with shark week, so we were excited that there was a Jaws-a-thon.  Unfortunately, the only one that we've never been able to see (because it's always on so late) is Jaws: The Revenge and we still haven't seen it.  I didn't think any of us would make it until 1:45 and then also be up to watch it until 4:00 in the morning!

Yesterday we didn't do much but hang out.  Future Fashionista and I did Dance Wii for a while~~so that counted as one of the 3 workouts I wanted to get in last week.  Thankfully, I met that goal!  Then, we watched Jaws and Jaws 2 again.

NOW, onto the budget and meal plan.
Since I bought some stuff for our get-together on Friday night, my food budget has now gone down to $55 for the week.  I'll be doing my shopping today and hope to make it on budget.  We might have to get a little creative sometimes though.

Monday:  Chicken Fried Rice, Stir-fried veggies (cabbage, zucchini, baby broccoli and sugar snap peas), plus maybe fried potatoes (because I need to use them!)
Tuesday:  Asparagus, Baked Potato Wedges & Turkey Sausage
Wednesday:  Pasta Salad
Thursday:  Beef and Black Bean Wraps
Friday: Fish sticks & roasted fingerling potatoes
Saturday: Every man for himself
Sunday: Breakfast for Dinner, Egg Casserole w/spicy ground turkey

I truthfully would like to do some more vegetarian things because we waste a lot of meat.  It seems like life always gets in the way of my plans and things get forgotten.  I'm either going to have to just put things directly into the freezer or always, always stick to my plan. . . . and I don't really think the latter is going to happen.

Goals for the week:

Muffins with Mom!
Help friend with house photo shoot.
Finish the darn crafts I started over a week ago.
Garage sale shopping.
List a couple more things on ebay.

Sometime soon goals (maybe not this week)
Clean Master bedroom closet~~again!
Clean craft room~~again!

I don't know how those two rooms get so cluttered, so fast!

  1. During the summer we have Salad Bar night. The next day we usually do Taco night, that way the only thing I usually have to prep is the soy meat. :D

  2. We love doing salad bar night, but it seems like so long since we've done it!! Are you guys back completely to being vegetarian in your house?
