Cheesy Baked Tomatoes, Zucchini and Onions
I had some zucchini I needed to use and some slicing tomatoes I needed to use. I sliced and layered them in a baking dish to use in this baked veggie dish.
I sliced a small sweet onion and put that as the bottom layer.
Then I sliced two small zucchinis and put those as the next layer.
One beefsteak tomato was sliced to layer on top of that.
Then I drizzled it with olive oil.
Then I sprinkled 1/3 cup of Panko bread crumbs on top.
The final ingredient was 1/3 cup of Parmesan cheese.
I shook it a little bit to try to get some of the breadcrumbs and cheese down into the bottom layers.
I baked it at 350 for a half hour and then turned it up to 425 for 15 minutes.
It was an easy, yummy veggie side to pair with our
and can be cooked in the oven at the same time.
