We still have all of that frozen chicken in our freezer from that huge GFS haul a month and a half ago. Obviously, if you follow my Meal Plan Monday posts, you've realized that I haven't posted one this week. That's because we were at the Water Park on Monday, which is my usual shopping and planning day. It's Summer!!! I think that the whole shopping and meal planning thing will be kind of wacky until the Summer vacation is over.
We made our grocery trip today and stuck to what our original budget was supposed to be, but definitely didn't make up for the overage that we went over last week.
Ohhhhh. . . . . you might have also noticed that we didn't do our weekly grocery shopping and budget post this week. We usually do those on Mondays also, and I figured the kids wouldn't sit around while I tried to get pictures of all of our groceries today, since I promised them a trip to the Ice Cream place. Our original budget was supposed to be $67.42 and we spent $67.91. D'oh! I thought I came in under budget! Missed it by .49 cents! Plus, we went to CVS today and spent money on Sunblock and cat food. Pretty soon, I'm going to have to make sure those things are included in the budget. I think I'll tally all sunblock purchases this year to see how much I'll have to allocate in the budget for next year.
ANYWAY!! On to the Chicken Recipe!!!
This recipe was so yummy that my hubby and I stood over it and just ate it at the island in our kitchen. Let me say that I'm a HUGE proponent for family dinners. I like it when we all sit down together and share dinner time. I think it's SUPER important. I actually get a little tweaky if we've gone a few days without sitting down for dinner together. But since it's Summertime, and so much is going on, and we're all in and out all day long. . . . . . this one time, we ate dinner standing at our island. Without the kids. We'll call it a mini-date. Yeah. We had a standing-at-the-island, chicken- salad-eating, mini-date.
Once AGAIN. . . . . ON TO the RECIPE!
What we used:
2 cups of diced chicken, cooked however you choose
1/4 cup dried cranberries
1/4 cup cashews, rough chopped
1 small radish (chopped small) I was just trying to see if I could get away with it!!!)
1 medium gala apple, diced small (we left the skin on)
For the dressing:
I cheated and used 1/4 cup bottled poppyseed dressing
1/4 cup plain yogurt
Once your chicken is cooked and diced (grilled would be really good, but we boiled ours for ease), let cool.
Place cooled chicken, cashews, dried cranberries, chopped radish and diced apples into bowl.
Stir to combine.
Mix together the plain yogurt and poppyseed dressing and pour over the chicken mixture. Mix together until everything is combined well.
Cover the bowl and chill in the fridge for 2 hours.
Serve on Romaine lettuce leaves. The Romaine lettuce leaves can be rolled around them to eat as a Romaine wrap.
