Meal Plan Monday and Goals (A Day Late!)

Well, I guess I never got around to posting my meal plan yesterday!  That's how Summer goes.  We did actually make a menu plan AND write it on our menu board.
We finally went out and bought chalk for our menu board, so I now have dedicated chalk!  Haha.
The kids are not allowed to touch MY chalk! When I told the kids that, my son replied,

"Oh don't worry!  I'm not gonna touch the chalk.  It would remind me of being in school!!"

 Since it's hard to get a good picture of the menu board, here's what we're having:

Monday:  Meatball and Corn Hash~~My son said the potatoes were "heavenly"~~I diced 2 small russet and 6 yukon gold potatoes and cooked them in a cup of water in a large electric skillet over medium high heat until the water evaporated~~about 15 to 20 minutes.  Then I poured about 2 Tbsp. of olive oil over them and sprinkled this mixture on them:
1 Tbsp. onion powder
1 Tbsp. garlic powder
1 tsp. salt
1/2 tsp. black pepper
1/2 tsp. paprika 

Then, I added 24 frozen meatballs and a drained can of corn to the potatoes.  I covered it and cooked for 15 more minutes until the meatballs were heated throughout.  I also cooked green pepper and onions separately and added them to one side of the meatball hash for my hubby and me.

Tuesday:  Ham, Broccoli and Rice Casserole with Corn on the Cob
Wednesday:  Chicken Stir-fry and zucchini
Thursday:  Crock-pot Rice and Bean Enchiladas and Mini Peppers
Friday:  Smashed chickpea and rice crunchy tacos
Saturday:  Family Picnic (might take a cold sweet black rice salad)
Sunday:  Sausages, Burgers and Portabella caps with who knows what sides!

How Day 11 of Summer went:
We spent the day doing our normal every day chores:  clean kitchen, wash clothes, blah, blah, blah and of course did our weekly grocery shopping and came up with this super-refreshing and yummy Sparkling Lemonade Sherbet float

We also noticed that those gorgeous cherry blossoms from a couple months ago have now become full-blown cherries!  That seemed so quick to me!  I meant to go back outside and eat some of them. . . the best way to eat them is straight off the tree.  The seeds are so big on the inside we wouldn't be able to do much else with them.
We also finally cut the big, seeded watermelon yesterday.  I wanted my kids to try an old-fashioned watermelon.  We were going to have a seed-spitting contest with this watermelon, but it hasn't happened yet and I ended up having to cut the watermelon into chunks to fit into a container for the fridge.  I always just imagine biting into a big hunk, rind and all and getting the watermelon juice everywhere and then spitting out the seeds.  
My son was not impressed.  He left his watermelon sitting in the bowl on the counter.
My daughter actually played along for a little bit and went out on the front porch to spit seeds.

As for GOALS for the week:
The ONLY goal I actually crossed off my list last week was the homemade hand soap.  I got that done.
My fridge is still a mess and I still need to sew that comforter cover.
So, those will continue to be my goals until they get done.
Other than that, I am not setting goals for this week!
EXCEPT that I need to make more laundry soap.  That's gonna have to happen or I'm not going to be able to do laundry.
