Salmon Wraps with Baby Bok Choy, Avocado and Mustard Vinaigrette

 I had on my weekly menu plan to make salmon on Friday night.  I had no idea what I was going to do with our salmon though! To make things easy, I usually try to pre-cook as much as I can during the day while the hubby and kids are at work and school.  Since we had just received our Blue Sky Green Fields produce order, I wanted to use some of that stuff also.  Here's what we came up with:
I love salmon and avocado together.  And my hubby and I LOVE baby bok choy in salads.  I just decided to combine all of those things in those whole grain flax flatbreads that we love so much from Aldi.  Those things have proven to be very valuable lately!!!  
LOVE, LOVE, LOVE the versatility of them.  I hope Aldi doesn't stop carrying them any time soon!

For this recipe, I grilled my salmon on a George Forman grill ahead of time and just stuck it in the fridge until I was ready.  Each wrap only uses 1/8 pound of a cooked salmon fillet.  I buy frozen salmon fillets from Aldi.  Usually, there are 4 fillets in each one pound package.  I used half of a fillet in each wrap.


Here's what we used for each wrap:
1 flatbread rectangle
2 baby bok choy leaves
1 mini pepper, sliced into rings
1 scallion, chopped
black pepper to taste
1/4 avocado, sliced thin
2 oz. of grilled, flaked salmon


For the mustard vinaigrette dressing (enough for 2 wraps):
1/4 cup olive oil
2 tsp. white wine vinegar
1 Tbsp. whole grain mustard
1/2 tsp. garlic powder
black pepper to taste




How to make the salmon wrap:


Whisk together all of the dressing ingredients and put aside.
 Place 2 baby bok choy leaves in the middle of a rectangular flatbread.
Spoon 1 teaspoon of the mustard vinaigrette on top of the baby bok choy.

Place avocado and pepper rings on top of baby bok choy.

Spread more vinaigrette and sprinkle black pepper, if wanted.
Sprinkle chopped scallions on and then
place the flaked salmon on top of veggies.

Spoon more mustard vinaigrette on.
Start wrapping from one of the short ends, making sure to wrap all of the ingredients tightly in the middle.
