Here's a tip for cutting the beets with one hand: A shorter knife is easier to handle and gives you more leverage. I didn't worry about peeling them, the skins get soft enough during cooking.
Once the beets and carrots were cut, I placed them into my small bakeware and poured just enough beef broth in to cover the bottom of the dish. I cut one Tablespoon of butter into small pieces and sprinkled it on top of the veggies.
The next step was to drizzle honey on the veggies. Then I sprinkled garlic powder and crushed red pepper on.
I baked the beets and carrots in a 400 degree oven for 50 minutes, stirring halfway through.
