Meal Plan for the Week
Well, it's been a while since I've done a meal plan because it's just too hard and tedious to cook with only one hand. There are some things that I've done, but in general it's just too hard. I'm going to start trying again this week. My family is going to have to help me open some things before they leave for the day. I tried to open a can of chickpeas with a manual can opener last week and couldn't get it open. It sat in the fridge with the can-opener attached until today when someone else finally opened it.
Here's what I'm going to attempt this week. It might happen, it might not happen. . . . . . but I've got the stuff for it. Might switch my leftover day to Tuesday and do the chicken fried rice on Monday.
I even managed to write it on my DIY Chalkboard Menu Board with my left hand.
Sunday: Taco night with taco meat, brown rice, organic pinto beans, peppers and grape tomatoes.
Tuesday: Chicken Fried rice and edamame
Wednesday: Breakfast with red potato cubed hashbrowns, low sodium turkey bacon and eggs
Thursday: Slow cooker pork chops with sauerkraut, green beans and red potatoes
Friday: Pasta with sausage
Saturday: Attending a clambake with friends
