Spaghetti Moussaka Pie

I was supposed to make this last week, but most of the ingredients are from the pantry and I had some other fresh produce that needed to be used first.  So,I decided that this meal could be pushed to this week.

I'm sharing this one just as inspiration.  The recipe itself still needs some tweaking.  It definitely needed some salt and for my liking. . . . .more CHEESE!!!!!

This is a combination of spaghetti pie and vegetable moussaka. It has the bottom layer of a spaghetti pie and the top layer of a veggie moussaka.  It is actually easier than my original moussaka recipe that I use because you don't have to deal with the eggplant. . . . .all that slicing and salting, and rinsing and draining and sautéing.  It still has quite a few steps, but at least you don't have to deal with the eggplant. 


With the whole wheat noodles, lentils and chickpeas, it is loaded with fiber.  It also has a little calcium from the yogurt and cheese. 

Here's what I used. . . . As I said. . . . Not a real recipe. . . . Just for inspiration! As it is, I'll probably be eating it for breakfast, lunch and dinner, topped with my tomato soup.  I don't think I'll be able to get the kids to eat it again.

Normally I would make this in my 9x13 baker, but it's too heavy for me to maneuver with only one hand, so I made it in 3 smaller bakers.


10 ounces thin whole wheat spaghetti, cooked according to package directions
2 eggs
1/2 cup plain yogurt
1 1/2 teaspoons garlic powder
1 1/2 teaspoons onion powder
1 1/2 Tablespoons parmesan cheese
(Definitely needed salt here, and maybe some butter and garlic. Maybe skip the yogurt and use more parmesan.  But hey! It was worth a try)

1 1/2 cups chicken broth
1/2 cup dry lentils
1 bay leaf


1 can of chickpeas
1 14 oz. can of diced tomatoes
4 oz can sliced mushrooms
2 tsp. tomato paste
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1 1/2 teaspoons herbs de provence


1/2 cup plain yogurt
2 eggs
3 oz. white cheddar cheese shredded
