It has been so nice to be able to get back to my meal-planning now that I can use my hand a little bit more. It makes my life so much easier if I have a plan. Plus, it helps me stick to a budget and ensures that I don't waste any of the produce from our organic hauls.
Here is what this week's plan looks like~~of course most weeks don't go by without me switching something up.
Sunday: Roasted Chicken, Chicken flavored brown rice, broccoli and zucchini.
notes: the chicken was yummy and I've been making homemade chicken stock with the bones in my slow-cooker overnight and again today. I wanted to see if I could use the bones twice. Might as well get as much out of that organic whole chicken as possible!
Monday: Spaghetti Moussaka Pie~~ this is a hybrid recipe I'm working on today. I'll have the recipe posted by tomorrow hopefully. I was going to make it last week, but things got shuffled.
Tuesday: Creamy White Bean and Pepper Soup in the crockpot ~~ using the first batch of homemade chicken stock.
Wednesday: Chicken Fried Rice
Thursday: Black Bean and Rice Enchiladas
Friday: Beef Stew ~~ I'll be getting 2 free organic turnips with my Blue Sky Green Fields order this week and one of my friends said she loves turnips in beef stew, so I'm going to try adding them this time.
Saturday: Hubby and I have a pig roast wedding celebration to go to and the kids will have frozen pizza.
Goals for this week:
My main goal for this week is getting the house cleaned because some people are coming to our house Friday night for a small party. It has been difficult to perform some cleaning tasks with only one hand, but this week I'm going to have to figure out how. So, this is my cleaning schedule for this week.
Monday: Laundry, Mop Floors, stay home with sick kid
Tuesday: Windows, Grocery shop, Clean fridge
Wednesday: Garbage cans, have kids sweep porch
Thursday: Wash rugs from kids' bathroom, dust & get rid of cobwebs~~you'd be surprised how many there are after 9 weeks of having a broken hand~~yikes! Clean couches. I wish I could take the cushions out and wash the covers, but that job is hard enough with 2 hands!
Other than cleaning, I don't have much of a to-do list, but I think that will be challenge enough for now.
