Bok Choy Salad with Sardines and Mustard Vinaigrette

This dish was inspired by a Sardine Sandwich that we saw on one of Anthony Bourdain's shows.


 The sandwich had sardines, boiled egg and red onion on it.  Instead of making it as a sandwich, I decided to convert it to a salad.  I just got some bok choy recently, so I decided to include it in this salad.  I used a mustard vinaigrette recipe that I found on allrecipes.com.
as the dressing.  Also, I  had some avocados I needed to use, so we put those in as well.


We used:
1 head bok choy, cut into 1" pieces
1 head iceberg lettuce, chopped or ripped
1 1/2 avocado, diced
1/4 red onion, sliced thin
2 stalks green onion, cut into pieces
2 cans of sardines packed in water
4 eggs, hard-boiled and sliced
Homemade Whole Wheat Croutons

Directions:
Put all salad ingredients in a large bowl and toss.  Heat heavy pan with 1 Tbsp. Olive Oil (I know you're not supposed to cook it at high heat--oh well!)  over Medium High Heat.  When pan is hot, place sardines in pan and cook 2 minutes on each side.  Separate salad into 4 bowls and place sardines and croutons on top.  Drizzle the mustard vinaigrette on top.

LOVED, LOVED, LOVED how this turned out.  I think we'll keep this in the rotation.  Although, I do recommend that you don't cook it on nights that you're going to have friends over.  Now we are trying to whoosh out the fish smell by burning about a million candles.  So worth it though.
