Homemade Oven Baked Cubed Hashbrowns

I love good cubed hashbrowns.  They take me back to my college days when we used to wake up late on weekends and go get breakfast in the cafeteria.  They had the absolute best little cubed hashbrowns.  They were probably loaded with salt, which made them even better.  

I make homemade shredded hashbrowns sometimes, but making cubed hashbrowns in the oven is so much easier!

I can use any kind of potatoes for this, but this time I used butter reds because that's what I found on sale last week.  If you're using russets, just use fewer potatoes.

5-6 medium to large red or yellow potatoes
1/4 cup olive or vegetable oil
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
1/2 tsp. Paprika
Salt and Pepper to taste
 1/2 tsp. Dried Parsley

Preheat oven to 400 degrees.
Cube potatoes into 1/2 inch cubes.

Pour vegetable oil over potatoes.
Sprinkle garlic powder, onion powder, paprika, parsley, salt and pepper on potatoes.

Mix potatoes, oil and seasoning with spoon until potatoes are completely coated.

Bake in preheated oven for 35 - 45 minutes.
Stir potatoes after first 20 minutes.  
(I usually stir several times during the cooking process)
