I know I'm a day late on my meal plan. I used to do them on Mondays, but the holidays went and threw a wrench into all of that. That's okay, because it's a New Year and now we can get back to it!
I wasn't going to make a meal plan this week, but I kind of have an idea of what we'll be doing. The meal plans are actually a little bit harder because my hubby and I are trying to get in shape right now. We both started before the holidays, but now we need to kick it into high gear.

This is what our meal plan has looked like/ will look like for the rest of the week:
Sunday: We had a holiday ham we needed to cook. Ham and homemade mac 'n cheese. Where were the veggies? Who knows?!?
Monday: Tuna stuffed Baked Potatoes Kids had leftover ham and mac 'n cheese.
Tuesday: Homemade Whole Wheat Pita Pockets with marinated and sauteed tofu and veggies.
Wednesday: Shepherd's Pie
Thursday: Sausage and Sauerkraut ~~I'm trying not to eat any more nitrates this month, but I have sauerkraut I need to use. Maybe I'll do pork instead?? I have been mixing the sauerkraut with extra cabbage also, so that it won't be so sour for my hubby.
Friday or Saturday: Roasted whole chicken with veggies that we get from our Organic haul this week. One of the two nights will be leftovers OR what we call "Every man for himself."
