Meal Plan Monday Featuring Shrimp Soft Tacos

It's Monday.  That means it's meal plan time!  I find it makes my life easier during the week if I have a dinnertime game plan that I can reference.  Here is what our meal plan looks like this week, beginning with last night's shrimp soft tacos.


Sunday:  Shrimp soft tacos and cilantro lime Spanish rice~~recipe below.
Monday: Pork with green beans and sauerkraut. (It smells so good I want to eat it right now!)
Tuesday:  Chicken and rice casserole
Wednesday: Pasta with nitrate free spinach and feta chicken sausage and "cream" sauce
Thursday:  Veggie soup in the crockpot
Friday:  Whole roasted organic chicken (my last one in the freezer!), roasted potatoes and salad
Saturday: Every man for himself


To make the Shrimp tacos, buy frozen precooked medium shrimp.  Once thawed,  remove the tails from the shrimp.  Place the shrimp in a bowl and sprinkle with one packet of taco seasoning. Stir shrimp to coat shrimp with seasoning.  Put shrimp in the fridge while you prepare the rest of the meal. We also had sautéed onions and multicolored sweet peppers and the cilantro lime Spanish rice.
Once everything else is ready, warm up the shrimp.  Since it's precooked you don't want to overcook it.  Tough shrimp are not as good!  Heat a pan over medium heat with a teaspoon of olive oil.  Place the shrimp in the pan and toss a few times until shrimp are heated.  It will only take about 1 minute. 


For the cilantro lime Spanish rice, I cheated and used canned tomatoes that were cilantro lime flavored and quick cook brown rice. 


Cilantro Lime Spanish Rice Ingredients
1 1/2 cups water
1 can Cilantro Lime diced tomatoes
2 cups quick cook brown rice


Cilantro Lime Spanish Rice Directions
Pour water and canned tomatoes into medium sauce pan and bring to a boil over medium-high heat.
Add the rice. 
Turn burner to lowest setting and cover saucepan with lid.
Cook for 8 minutes and then turn burner off.
Let rice sit for 5 minutes and then fluff with fork.




I spent $92.22 this past week on groceries.  Unfortunately, most of it was NOT organic.  The only organic stuff I got this week was one pound of organic spring mix and two cartons of organic chicken broth from aldi.  I'm at $277 for the month now with my grocery budget, but I should be good for this week and shouldn't have to shop again until the beginning of next week.   If I'm trying to stick to $350/month on groceries, then I only have $73 left to spend this month.  I plan on spending $30 at the end of this week on organic produce.  That leaves me with only $43 to finish out the last week of the month.  I would be okay if I went a little over because I would like to budget between $350 - $400, but it sure would be nice to be able to get it to $350.
