Artisan Cracker Pizza with Kale and Feta

I like my pizza crust thin.  . . . . like, really thin.   

I often joke that I like it to be like crackers, so making pizza on crackers really wasn't a stretch for me.  I had these Artisan Crackers from Aldi.  I had never seen crackers like these before.  They come as big rectangles and then you break them.  For these pizzas, I left them whole.

For each pizza I used:
1 Large Rectangle cracker
1 Tbsp. Spaghetti Sauce
1 Sprig of Kale, removed from tough stems and ripped
a couple parsley leaves
1 black olive, sliced thin
1 pepperoncini, sliced thin
1 Tbsp. Feta Cheese
1/2 clove garlic, sliced thin

Build your pizza:

Bake in an oven that has been preheated to 350 for 10 minutes.
