Avocado and Grapefruit Salad

I was looking for recipes to use all of these grapefruit!
(Only half of these are grapefruit, the other half are Cara-Cara Navel Oranges)

I ended up at the Food Network site and there were three recipes for Avocado Grapefruit Salad.  Since I also have some avocados I need to use, the salads sound perfect.    Each of the Food Network stars' recipes have their own little twist.  I used the Dijon Mustard idea from Ina, the nut idea from Emeril and the lime idea from Daisy, and just because I could use a little more greens today I put it on a cup of baby spinach.  Also, I've been craving Feta cheese all day, so I threw some of that on, too.

Emeril Lagasse Grapefruit and Avocado Salad

Here's what's in mine:
1 Ruby Red Grapefruit, peeled and separated into segments
1 cup Spinach
1/2 Avocado, Sliced
1 tsp. Dijon Mustard
1/4 cup Walnuts, toasted
1 Tablespoons Olive Oil
Black Pepper
Juice from one lime
Some Feta Cheese I've been craving all day!


My thoughts after eating it:
I kept forgetting that I was eating grapefruit in something and the bitterness caught me off-guard!  I think I'd like to try the same thing with the oranges instead.   I think I like grapefruit all by itself, although I will keep looking for recipes.  I didn't mind the feta with the grapefruit.  I think I would have liked more of a sweeter vinegar based dressing with it.
