Meal Plan Monday and Goals for the Week

It has been so long since I've posted my meal plan for the week, or menu plan, whatever you want to call it.  This is just my dinner plan.  I haven't gotten into the full-blown week plan yet.  I've never done that.  Maybe I'll have to try to start planning that out too.  We still have some food waste every now and then and maybe a full-blown meal plan would help with that.

But first off. . . . . .

Happy Spring!!!!

Spring greeted us here in the midwest with snow showers!  Sounds like it was pretty cool all across the country, though.

Yesterday, I was trying so hard not to work.  I tried to pre-cook my dinner on Saturday night so that all I would have to do on Sunday is turn the crock pot on.  I tried to get all of the laundry done on Saturday.  I wasn't going to look at anything online that had to do with work.  No cleaning, etc.  That just didn't work.  I'm not sure how to go through a day without doing any kind of work.  I think that it might take me a while to get everything prepared enough to let myself settle into a work-free day.  

This week, the menu plan was all about whatever we had in the house.  Eventually, I'll hopefully be able to get back to more organic and healthy stuff.  For now, this will have to do.

As long as I can make the quota of fences that I'm supposed to make and don't hurt myself too much again, I plan on working outside of the house 10 hours a week.  That is going to take a little bit of adjustment.  I was trying to come up with a plan on how to fit everything in at the beginning of the year BEFORE I started working.  Now that I'm working a little bit outside the house, I'm really going to have to come up with a schedule.

Here's what this week's meal plan looks like:

Sunday:  Chili over rice with corn & cheese.
Monday:  Salmon & Fried Rice, stir-fried veggies
Tuesday: Tacos
Wednesday: Spaghetti & Meatballs
Thursday:  Pork Roast
Friday:  Black Bean Enchiladas (whole wheat tortillas)
Saturday: Every Man for Himself

Goals for the week:
  • Make 100 fence panels
  • Make a calendar board for my kids chores
  • Start Cleaning Craft Room
  • Try to weed through more of my clothes to donate 
  • Workout 3 times
  • keep up with blogging!
