Healthy and Inexpensive Student Meal Ideas

This recipe is suitable for meat-eaters, vegetarians, and vegans, and can also be easily tweaked to include veggies that you enjoy the most. To prepare the soup, peel and boil sweet potatoes and butternut squash in a pan until they are soft, with salt and pepper to taste. For extra flavor, add a vegetable stock cube to the boiling water. Then, simply add the vegetables to a blender, blend, serve and enjoy! This is a great recipe for batch cooking as the soup will keep for a few days in the fridge or freezer.
Meaty Pasta and Sauce
Pasta is a great choice for students as not only can it be obtained very cheaply, it’s versatile and there are a multitude of different sauces that you can use with it. For this recipe, you will need minced meat of your choice (beef mince goes well, but you could use pork, turkey, or even vegetarian mince if preferred). You’ll also need chopped tomatoes or passata, one carrot, one stick of celery, one brown onion, and a clove of garlic. Blend the carrot, celery, garlic, and onion into a liquid consistency. In a large pan, cook the meat until browned and add the passata and blended vegetables, along with your favorite herbs and spices and salt and pepper to taste. Leave to cook for around 20-30 minutes, then add to your pasta and enjoy. The sauce can be frozen for later.
