Peanut Butter & Apple Sweet Potato Hashbrowns

It sounds crazy, right?  Peanut butter sweet potato hashbrowns???

I have no idea why it popped into my head.  It could have been some crazy subliminal recipe that hatched from my daughter's writing prompts for the month.  My kids are infamous for doing part of their homework or schoolwork on the bus.  She apparently had to write seven journal entries this month, but she only had five done so far.  So, while we were waiting for the bus today, she was working on one of her journal entries.  One of the writing prompts was "Create a Peanut Butter Recipe."  It went into my head and left immediately. Or. . . . . DID it????

As I was browsing on my computer this morning, I thought sweet potato hash-browns and a soft cooked egg sounded good!  A half hour passed and that thought changed into, "I want peanut butter." I've been having weird cravings lately.  Yesterday I opened the fridge and thought, "A cold glass of milk would be good"  and I HATE milk.  Don't like it at all.  No, I'm not pregnant.  Probably as far removed from that as possible. . . . .
Anyway, peanut butter sweet potato hashbrowns popped into my head.  I headed to my kitchen and this recipe was born!

I wasn't sure exactly which direction I was going to go with this, but the end result was yummy.  It has just a hint of cinnamon.  I added some crushed red pepper because I like things spicy.  You can certainly leave that off!

This recipe uses:
1 Tablespoon olive oil
1 small sweet potato, peeled and cubed
1 quarter of an apple, diced (about 1/4 - 1/2 cup) I left the skins on.
1/8 teaspoon cinnamon
1/8 teaspoon paprika
pinch of salt
2 tablespoons peanut butter

This will look sticky!  I decided not to try to dry it out.  I didn't want all of the peanut butter to burn away!

Optional:  Fresh Cilantro, 1 stalk of green onion, crushed red pepper

Directions:
Heat olive oil in skillet over medium heat.
Add sweet potatoes and cook over medium high heat, stirring occasionally for 5 minutes.

Turn heat to low and cook, stirring occasionally for an additional 5 minutes.
Add the apples, the cinnamon, the paprika and the salt.

Cook for two minutes, while stirring.
Add the peanut butter and stir to coat all of the sweet potatoes and apples.
Cook, while stirring for 1 or 2 minutes more.
Place sweet potato hash browns in a bowl and top with cilantro, green onion and crushed red pepper if desired.
