Cucumber Radish Salad with Yogurt Dressing

I love the coolness of cucumber and the bite of radish.  Plus, they're so pretty together.

I had some baby cucumbers that I got in the organic section of Aldi that I needed to use.  Plus,  I had some radishes that also needed to be used.  Radishes are unfortunately one of those things that I let slip my memory and go bad in my veggie drawer.  I intend to use every last one of my most recent bag, though.  And why wouldn't I?  They're so good for you.

Side note:  Radishes were actually the first vegetable that I ever grew on my own.  I was SO proud of that first radish.  If I can grow radishes, anyone can grow radishes.  We never tried to grow our own garden after that year, because there is so much to know about gardening.  All of my friends have gardens. One friend in particular we call the garden whisperer.  She has the most amazing garden every year.


She learns about every pest and issue in her garden and the best way to take care of them. She keeps notes and logs and I really do think that she sings to her plants and tells them how very important they are to her.  🏡 😊☼  At any rate, as I said, if I can grow a radish. . . . . anyone can grow a radish.  Who knows?  Maybe I'll try again next year.

Radishes have Vitamin C, folate, potassium, and fiber, among other nutrients and may have cancer preventing properties.

For this salad, I used these ingredients:

2 mini organic cucumbers, sliced thin
4 radishes, sliced thin
1/2 a medium red onion, quartered and sliced thin
couple stalks of cilantro, leaves only

1/4 cup plain organic yogurt
1/2 teaspoon apple cider vinegar
1/4 teaspoon crushed red pepper
about 1/8 teaspoon salt & 1/8 teaspoon ground black pepper

Other than that, I wanted to leave it fresh and unencumbered by any other flavors.  I love the little spicy kick that the crushed red pepper gave it.

    1. I think for some, radishes are an acquired taste! Some of them can really have a bite! Thanks for stopping by. :)
