Pina Colada Mini-muffins

By the time you're reading this, I hope I'm drinking a Pina Colada in the Florida Keys.
But, I've left a yummy Pina Colada muffin recipe for y'all!!  I tried these last week and the pineapple chunks were a little too big.  So this time, I got out my Pampered Chef chopper and went to town!  You can just buy the crushed pineapple and skip that step.  And this time I added flaked coconut as well.  My daughter and I thought they were super yummy.  A friend also asked for the recipe because her son loves pineapple.  Here's the recipe!

   It's hard to make muffins look exciting in pictures, y'all!  
Pina Colada1
1 1/2 c. whole wheat flour
1/2 c. brown sugar
1/2 tsp. salt
2 tsp. baking powder
2/3 c. coconut milk (I used light)--You could also substitute 1/3 cup  dairy or soy milk AND 1/3 c. vegetable oil
1 egg
1 c. crushed pineapple (juice from can reserved)
1 c. flaked coconut
1/2 tsp. almond extract
1/2 c. pineapple juice (from canned pineapple)

Mix all dry ingredients together.  Mix wet ingredients together.  Combine wet and dry ingredients until just mixed.  Do not overmix.  Let sit for 10 minutes before filling muffin tin.  Spray muffin tin with nonstick cookspray.  Cook at 350 for 9-11 minutes for mini-muffins.
