Super Quick and Easy Pizza-dillas | Recipe Linky

We had some left over soft taco shells from Saturday.   We love it when any kind of tortillas are left over because we can use them to make quesadillas.  Unfortunately I was out of cheddar cheese.  But, I had mozzarella and I just happened to have some turkey pepperoni also.  So, we made Pizza-dillas.  My kids didn't want me to put any tomatoes on theirs, so their's was just cheese and pepperoni.  I made mine with slices of tomato, pepperoni and mozzarella.  I also sprinkled Parsley and black pepper on mine.  It would be really, really good with Basil though.  This is what it looked like before I put the top tortilla on to cook it.  There is cheese underneath the tomatoes and pepperoni also.  You can make these as healthy as you like.  For a healthier version use whole wheat tortillas, low-fat mozzarella and skip the pepperoni in favor of fresh veggies.  Yummo!
I did mine on a George Forman grill.  If you have a larger grill this would be an even quicker recipe because you could do more than one at a time.  It only takes about 2-3 minutes per quesadilla.  If you have the larger burrito tortillas, just fold them in half before you fill them.  Don't forget to spray with non-stick cooking spray!  Cut them into triangles and enjoy!  They would be yummy dipped in marinara sauce.
