Whole Grain Chocolate Chip Mini Muffin Recipe

Samantha from "medtopicwriter" mentioned that she was looking for a Whole Grain Chocolate Chip muffin, so I set to work to create a recipe!  I have a recipe for whole wheat chocolate chip pancakes HERE.  But, I hadn't posted one for the chocolate chip muffins yet!  So, here it is.  Jaycee and I ate 21 of these things within a half hour of them coming out of the oven!!  Sometime soon, maybe I'll make a tab just for my muffin and pancake recipes!  Because truthfully, I made up my chocolate pancake recipe as I went along and the only place I have it written is on the blog.  So, every time I want to make the chocolate pancakes, I have to come back here and look!  (I really should print a copy and put it in my recipe binder!)

Whole Grain Chocolate Chip Mini Muffins
2 cups whole wheat flour
1/4 cup lightly packed brown sugar
1 Tbsp. baking powder
1/2 tsp salt
1/2 cup old fashioned oatmeal (rolled oats)

1 cup milk
1/3 cup vegetable oil
1 egg
4 oz. unsweetened apple sauce (snack sized cup)
1 Tbsp vanilla extract

3/4 cup chocolate chips

Mix all dry ingredients together in large bowl.  Mix all wet ingredients together in small bowl.  Pour wet ingredients into dry ingredients and mix.  Do not overmix.  Mix until just combined.  Fold in chocolate chips and let stand 10 minutes.  It's important to let whole grains sit for a little so that they soak up the liquid.  This makes them much softer once they're cooked.  For mini-muffins, cook at 350 for 9 minutes.  Ovens vary, so keep an eye on them.  A toothpick/tester should come out clean~~unless of course you hit one of those gooey, yummy chocolate chips!
