Crock-pot again! Clean the Fridge Vegetable Ragout

According to Wikipedia the term ragout (French ragoĆ»t) refers to a main-dish stew.  I got my inspiration for this recipe from my Everything Healthy Slow Cooker Cookbook.   This ended up being my own concoction because I was cleaning out the fridge.  I had more spinach that I needed to use and had 2 large zucchini, some peppers and tomatoes.  They all really, really needed to be used!  So, I threw them all together in the crock-pot with some Herbes de Provence (again!) and I was done with dinner.

Here's what I ended up using:
8 oz. of Baby Spinach
2 Green Peppers, cut into 1" pieces
2 large zucchini, cut into 1" pieces
4 tomatoes, cut into 1" pieces
1 vidalia onion, sliced and separated
3 cloves of garlic, minced
1 tsp. Herbes de Provence
1/2 tsp salt
1 tsp black pepper ( I thought this was way too much!--But my husband who doesn't like spicy food, is still eating it as we speak--well, write)
1 cup water

Just throw everything together in the crockpot and cook on low for 4-5 hours.

Tomorrow, I might be doing the Cauliflower Chowder from The Everything Healthy Slow Cooker Cookbook.  I have a head of cauliflower and a head of broccoli I need to use!  And I have everything else I need here!  Woo Hoo!  Well, except the immersion blender.  Maybe I need to go to the store.  ; )  Or, I wonder if I could mash it with a potato masher?  Nah, I need an immersion blender.
