Vanishing Pizza Muffins (mini-muffins)

Friends came over today and the kids wanted them to stay for lunch.  I didn't have any kind of kid friendly lunch food. . . not even a slice of bread! Luckily, it's cooler today, so I could use the oven.  I came up with this recipe.  It's a muffin made with half whole wheat flour/half white flour.  It was an experiment again.  And it turned out pretty good.  There aren't any left at all!  So, they must have been good.  And, since it was an experiment, I'll tell you exactly what I did and the changes I will make for next time.  Here's a picture of what they looked like about 10 minutes after I took them out of the oven.

Recipe as written

1 cup whole wheat flour
1 cup all purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
2 eggs
1/2 cup olive oil
2 Tbsp. Honey
1 tsp. lemon juice
1 cup milk
24 slices pepperoni, cut in half
3 string cheese, cut into 16 round slices each

Mix the dry ingredients together.  Mix the wet ingredients in a separate bowl.  Combine wet and dry ingredients until just mixed.  It's never good to over-mix any type of batter.  Let sit for 10 minutes (while you cut the pepperoni and cheese).  Spray (2) 24 space mini muffin pans with non-stick cooking spray.  Put batter into muffin tin with a teaspoon.  The muffin cups will be about 2/3 full.  Place 1 slice of pepperoni and 1 slice of cheese in each muffin cup on top of the batter.  Cover pepperoni and cheese with more batter.  As made, I didn't have enough batter to cover all of the muffins after the pepperoni step.  They were still good! Bake in 375 degree oven for 9 minutes.

The changes I would make would be:
  • Cut Pepperoni into quarters instead of halfs.  Put 2 quarter slices of pepperoni into each muffin cup.
  • Add parmesan cheese into the batter.  I would probably start with 1/4 cup.  

I whipped up a quick pizza dipping sauce by mixing tomato paste with water and throwing in some garlic powder, dried basil, dried oregano, a little (too much) sugar and a little salt.  Sorry, I don't have exact measurements, I usually just start sprinkling/pouring/dashing, etc.  I just didn't have any spaghetti sauce handy and I keep tomato paste on hand just in case.
