Cream Cheese Apple Mini Muffins

I adapted this recipe from a recipe I found on  You can find the original recipe here.
The changes I made were to use less sugar
, 1/2 whole wheat flour and no sugar topping.  And the cinnamon that they used in the topping, I added to my batter instead.

 And of course, I used almond milk because I ran out of dairy milk.

Cream Cheese Apple Muffins
3 oz. of cream cheese, softened
1/2 cup sugar
2 eggs
1/2 cup milk (I used almond, b/c it's all I had)
1/4 cup butter, melted
1 Tbsp. lemon juice
1 tsp. vanilla extract

3/4 c. whole wheat flour
3/4 c. all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 large tart green apple, peeled/cored/diced
1/2 cup rolled oats
1 tsp. cinnamon (I like things cinnamon-y)

In a bowl, combine cream cheese, sugar, eggs, milk, butter, lemon juice and vanilla.  Beat until smooth. 

Combine flour, baking powder, baking soda, salt, cinnamon and oats.

Add the wet ingredients to the dry ingredients until just combined.  Fold in apples.  

Bake at 375 for 9 - 11 minutes, until a toothpick or cake-tester comes out clean.

Makes about 44-48 mini-muffins.

I somehow managed to not get a picture of the finished project.  That was the day that Mike and his friends were putting up the trusses and the plywood on the roof~!  So, enjoy the only pictures we have. . . Jaycee helping me!
