Crispy Multi-Grain Bread Chips

Sometimes I'm in the mood for something crunchy.  I love Pita chips.  But the ones from the store are really salty.  Plus, I don't always have them around.  What I do usually have around is a loaf of bread.  So, I decided to try to make chips from bread.  And it worked.  They are not as hard of a crunch as store-bought Pita chips.  They have more of a delicate crisp to them.  But, they still satisfy my need for crunch.  And they do it while being healthy!
The directions are simple.
Preheat oven to 350 degrees. Flatten the bread with a rolling pin until they are between 1/8" to 1/4" thick.  Roll from both sides of the bread if you have to.  Then, cut bread in half diagonally and cut each side into triangles.

  Each slice of bread will make 4 - 6 triangles depending on how large you make them.  Spray a cookie sheet or cooking stone with non-stick spray.  Lay out the triangle and brush with olive oil.  You can put whatever seasonings you'd like on them.  I left mine plain since I was trying to stay away from added salt.  Bake in the oven for 8-15 minutes depending on your oven and your choice of bakeware.  I baked mine on a stone and those usually take longer to heat up.  Mine cooked for around 14 minutes.  Once they are a little crispy, take them out of the oven and let them sit on the cookie sheet/stone for a couple more minutes to continue crisping.  

We ate ours with an herbed yogurt dip.  We added onion powder, garlic powder, black pepper, parsley and dill to plain yogurt and dipped our chips in that.
