Spiced Whole Grain Carrot Apple Mini-Muffins

I'm always trying to come up with new muffins!  I almost always use whole wheat flour and I've been putting a lot of oatmeal in muffins lately.  So, these muffins are no different.  I've also started adding wheat germ to my muffins.  So, these muffins are high-fiber and have protein as well.

1 1/4 cups whole wheat flour
1 cup quick-cooking oats
1/4 cup wheat germ
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. salt

1/3 cup honey
1 egg
3/4 cup milk
1 tsp. lemon juice
1/4 cup butter, melted
3/4 cup apple sauce
1 large carrot grated
1 Tbsp. vanilla extract

Preheat oven to 350.  Sift or mix all dry ingredients together with a fork in a large bowl.  In a separate bowl, combine all wet ingredients.  Mix wet ingredients into dry ingredients until just mixed.  Do not overmix.  Let sit 10 minutes before filling muffin tin.  Prepare muffin tins with paper liners or cooking spray (or both).  I usually use paper liners and spray the liners.  My muffin pan is way too hard to clean, otherwise!  Bake in preheated oven for 9-11 minutes.
