Apple Banana Mini Muffins

I usually use whole wheat flour in my muffins, but I was out.  So, I used all-purpose flour this time.  Since I feel guilty using only white flour in anything, I threw in a little quick-cooking oats, too.  Made me feel a little better about them.  

1 cup all-purpose flour
1/2 cup quick-cooking oats
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

3 large bananas mashed
1/2 cup white sugar
1 egg
4 oz. of unsweetened apple sauce (1 small individual container)
1 1/2 tsp vanilla extract

Preheat oven to 350.
Mash bananas.  Add the sugar, egg, applesauce and vanilla extract.  Beat until smooth.

In a separate bowl, whisk together flour, baking powder, baking soda and salt.

Combine the wet and dry ingredients and mix just until blended.  Do not overmix.

Spray mini-muffin pans with non-stick cook spray or use paper muffin cups.  I actually spray non-stick cook spray on paper liners. 

Fill muffin cups.  Cook in preheated oven for 9 - 11 minutes.
