Easy Pasta Salad

I know that Pasta Salad is more of a summer recipe.  But, in my quest to use stuff I had on hand, I made a Pasta Salad.  It is so easy and really pretty healthy.  I always use whole wheat noodles for everything.  So, that adds fiber and vitamins.

You can make pasta salads with almost any kind of ingredients you have.

  I usually use a spiral shaped pasta.  And, I usually use ham, mozzarella cheese, broccoli, red pepper, tomato and onion in mine.  I did not have red pepper this time.  But, you could use pepperoni with your ham.  Or you could use any kind of cheese that you have on hand.  Use your imagination and the possibilities are endless.  I sometimes make Greek Pasta salads with Feta Cheese and Pepperoncini peppers.  Here is what I used this time. . .  and if it was up to me, I'd have black olives in it.  But, my hubby doesn't like black olives! 

13.25 oz. box of Whole Wheat Rotini
(1) 16 oz. bag frozen broccoli
1 onion, diced
1 tomato, diced
1 lb. ham, diced
4 oz. mozzarella, diced
1/2 to 1 bottle Italian dressing

Boil the water for the pasta.  Put frozen broccoli in colander.  Cook pasta according to package directions.  Chop ham, cheese and veggies while pasta is cooking.  Put veggies, ham and cheese in large bowl.  Drain pasta in colander with the broccoli.  Let cool.  Combine the pasta and broccoli in with the meat, cheese and veggies.  Pour salad dressing onto all ingredients and mix until everything is combined.  Refrigerate for 2 - 3 hours for all flavors to combine.  I used about a half bottle of dressing for this.  If you like yours "saucier", then use more.
