Slow Cooker Banana Bread

I had some bananas that needed to be used, but it's way too hot to turn the oven on right now.  So, I tried to cook my banana bread in the crockpot.  And it worked beautifully!

Here's the recipe I used.
I almost always cook with whole wheat flour, so that's what I used for this.

Whole Wheat Slow Cooker Banana Bread
2 cups whole wheat flour
1 tsp baking soda
1 tsp salt
1/2 cup butter, softened
3/4 cup Xylitol sweetener (you can use sugar)
2 eggs
4 ripe bananas
1/4 cup milk
1 Tbsp. Vanilla extract

Remove Crock from Crockpot warmer and turn crockpot on high.
Mix or sift together dry ingredients.
Combine wet ingredients.
Add dry ingredients to wet ingredients and mix until just combined.
Spray Crock Pot with a generous coat of nonstick cookspray.
Gently add Banana Bread mix to crockpot.  
Cover and cook on high for 2 to 2 1/2 hours.
Do not take lid off until 2 hours is up!
Insert cake tester to make sure bread is done.
If it's done, turn it out onto a cooling rack.
Refrigerate after cooled.

I was unsure of the amount of butter when I first tried the bread.  It seemed a little too buttery and too salty.  But, the banana bread was much better and sweeter after being in the fridge for a day.  I was happy with the results.  I've also tried to make an apple cinnamon bread.   I still need to tweak that recipe.  I was also thinking about trying a chocolate chip oatmeal bread.  Have you ever cooked breads in the crockpot?
