Chocolate Chocolate Mint Chip Cupcakes with Chocolate Buttercream Frosting

I made these for Future Fashionista's birthday.  I forgot to buy cake mix, so I made everything homemade.  We had some of the holiday mint chocolate chips, so I asked her if she'd like chocolate mint chocolate chip cupcakes and she said yes. They were so good!  And the frosting was super-yummy!

Cupcake Ingredients

1 cup all purpose flour
1/8 tsp. baking soda
1 1/2 tsp. baking powder
1/2 cup unsweetened cocoa powder
1/8 tsp. salt

3 tsp. butter, melted
1 cup unpacked light brown sugar
2 eggs
3/4 cup vanilla yogurt

1 cup mint chocolate chips

Frosting Ingredients
5 tablespoons melted butter
1/2 cup unsweetened cocoa powder
1/3 cup vanilla yogurt
3 cups powdered sugar

Cupcake Directions
Preheat oven to 350 degrees.  Sift together the dry ingredients.  Cream the butter and brown sugar together.  Add eggs in to the butter/sugar mix.  Mix well.  Add the yogurt to the wet ingredients and mix together until smooth.  Add the dry ingredients into the wet ingredients and mix until well mixed.  Fold in mint chocolate chips.

Spray cupcake pan or use cupcake liners.  Place batter into cupcake pan/liners until about 3/4 full.  This recipe only makes 12 cupcakes.  Cook for 13 - 18 minutes.  Ovens vary and mine were done a little before I thought they would be done.

Frosting Directions
Mix cocoa powder into melted butter.  Add in yogurt until smooth.  Then add powdered sugar 1 cup at a time and mix until smooth.  If it gets too stiff, you can add a little more yogurt or a little milk.

Enjoy!  I can't wait to make this frosting again.  It was soooo yummy!
