Whole Wheat Chocolate Chip Banana Muffins

 I should not have made these muffins!  I'm going to gain weight just because they're so yummy!  Although, they are fairly good for you.  I always use whole wheat flour in all of my recipes, so at least they're whole grain.  I added chocolate chips because I was cleaning and there was half of a bag sitting in my cupboard.  That's my story and I'm stickin' to it!

Whole Wheat Chocolate Chip Banana Muffins


1 1/2 cups whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

3 ripe bananas, mashed
1/2 cup sugar
1/3 cup butter, melted
1 egg, room temperature
1 tsp. vanilla extract
1 cup chocolate chips (or however much you have left over in your cupboard!)

Mix together all of the dry ingredients with a whisk in a small bowl. 
Mix together all of the wet ingredients in a medium sized bowl.
Add the dry ingredients to the wet ingredients and mix with a spoon until just thoroughly combined.  Mixing too much will make them tougher.

Heat oven to 350 degrees and let batter sit in bowl while oven is heating.

I ALWAYS make mini-muffins.
I use a cookie scoop and small muffin liners to make my life easier. 
I know the liners are not eco-friendly, but all of the washing and scrubbing it takes to get dried muffin off my muffin pan is not eco-friendly with all of the water it takes either.  So, I've decided mini-muffin liners is the way to go.  I get the huge sleeve at GFS.  The box lasts me a really long time.

BAKE at 350 for 9 minutes for mini-muffins.  Makes 48 mini-muffins.
Bake 17 - 20 minutes for regular sized muffins. Makes 12 normal sized muffins.
All ovens are different, so adjust according to your oven.
